MAMMA MIA! Speaky's RECIPE: PASTA CARBONARA
Spaghetti alla carbonara:
Ingredients
4 people servings
350 g spaghetti
120 g pillow
4 Egg yolks
30 g pecorino cheese
20 g grated parmesan cheese
Extra virgin olive oil, salt, Pepper

What to do:
1) Reduce the pillow to sticks.
2)Collect the yolks in a bowl. Pepper them, add a mix of grated pecorino and parmesan cheese, a pinch of salt and mix with a whisk. Dilute the mixture with 40-50 g of cold water.
3)Cook the spaghetti. Then brown the bacon over low heat in a pan with 3 tablespoons of extra virgin olive oil, making sure that it is ready together with the pasta (for bacon calculate 7-8 minutes).
4) Drain the spaghetti al dente without draining them too much and put them back in the hot saucepan. Season them with the freshly browned bacon and its fat. Mix well.
5) Immediately after pour the egg yolk mixture on the dough, stir quickly and serve instantly.
6)Complete with grated pecorino cheese and a ground pepper.
